What you need

cup wheat flour

tsp fine sea salt
egg

ripe banana

tbsp unsalted butter

cup milk

cup baby spinach

tsp baking soda

pinch cinnamon

cup rolled oats

tbsp plain yogurt
Instructions
1 Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly. 2 In a blender, add the banana, spinach, milk, yogurt, melted butter, eggs, and vanilla. Blend until completely smooth. 3 Add in the oats, cinnamon, baking soda, and salt. Blend again until combined. 4 Transfer the batter to a bowl and gently fold in the whole wheat flour until just combined. Do not overmix. 5 Divide the batter evenly among the muffin cups (about 12 muffins). 6 Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. 7 Let muffins cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.View original recipe
