Shrimp Summer Rolls

Filled with fresh shrimp, carrots, cucumber, mint, cilantro, basil and lettuce in rice paper! So flavor and light! Perfect for a side or appetizer!

What you need

oz rice vermicelli

carrot

cucumber

cup fresh mint leaves

cup fresh cilantro

cup fresh basil

butter lettuce leaves

cup fish sauce

tbsp rice vinegar

tbsp brown sugar
cup warm water

clove garlic

tbsp lime juice
Instructions
1 Prepare dipping sauce and leave to side. 2 Bring a medium pot of water to boil, then add shrimp to cook for 2 minutes or until shrimp turns pink. 3 Prepare vermicelli noodles according to package instructions. Drain and leave to side. 4 Add warm water to a low shallow bowl. Prepare carrots, cucumber, mint, cilantro, basil and lettuce leaves. 5 Wet rice paper sheet and add 3 pieces shrimp, vermicelli and fresh veggies and roll up. 6 These are best served immediately.
