What you need
cup shredded coconut

tsp baking powder
tsp cornstarch

unsalted butter

cup sugar
egg

tbsp fresh lemon juice
tbsp lemon zest

tsp vanilla extract
Instructions
0 Preheat oven to 350F. Prepare cookie baking sheet with parchment paper. 1 In a large mixing bowl, mix together melted butter and sugar. Whisk in egg, lemon juice, lemon zest and vanilla. 2 Mix in flour, shredded coconut, baking powder and cornstarch. 3 Form into large golf ball sizes and place onto baking sheet at least 1” apart, flattening slightly with your palms. 4 Bake for 18 minutes!
