tbsp oil

cup light soy sauce

cup rice vinegar

clove garlic

tsp fresh ginger

tbsp sesame oil

tbsp honey
tbsp cornstarch

tbsp water
Instructions
1 Sauté the Chicken – Set your Instant Pot to sauté mode and add 1 tablespoon of oil. Once hot, add the chicken thighs and sear for 2-3 minutes per side until lightly browned. Turn off sauté mode. 2 Prepare the Sauce – In a small bowl, whisk together soy sauce, rice vinegar, garlic, ginger, sesame oil, and honey (or sugar). Pour the sauce and cornstarch slurry into the Instant Pot to coat chicken 3 Pressure Cook – Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes. Once done, allow a natural release for 5 minutes before manually releasing any remaining pressure. 5 Serve & Enjoy – Garnish with sesame seeds and sliced green onions if desired.
