Healthy Breakfast Burrito with 25g Protein - A Weekly Family Staple

Breakfast burritos are a staple in our home, and this one is hands-down my favorite. It’s packed with protein and veggies, not greasy at all, and it’s so satisfying - especially post workout. I make this burrito at least once a week, sometimes even more, because it’s one of those recipes that checks all the boxes: quick, balanced, family-friendly, and absolutely delicious!

What you need
bunch salsa verde

tsp avocado oil

tsp avocado

bunch baby spinach

tortilla

breakfast sausage

egg

bunch pepper and onion mix
Instructions
1 Heat a skillet over medium heat. Add the diced peppers and onions. Cook for a few minutes until they’re soft and slightly caramelized. 2 Push the veggies to the side and add the breakfast sausages and cook until they’re browned and fully cooked through. Cut into bite sizes. Toss in a handful of baby spinach and stir until it wilts down, about 30 seconds to 1 minute. 3 Pour eggs over the veggies and sausage. Gently scramble until just set. 4 Lay a warm tortilla on a plate. Add the egg and veggie mixture, sausage slices, and avocado. 5 Spoon over some salsa verde (or pico de gallo / sour cream if you prefer), sprinkle on cheese if you like, then roll it all up tightly. 6 Slice in half if desired and dig in while warm.View original recipe
