Instructions
1 Heat a nonstick pan over medium-low and lightly grease it with a bit of olive oil. 2 Crack two eggs into a small bowl and whisk. Pour into heated pan. 3 Before the eggs fully set, press your tortilla onto the eggs so it sticks and holds everything together. 4 Let it cook for another minute or two, then carefully flip it using a wide spatula. 5 Add your fillings on one half: spinach, tomato, avocado, cheese—whatever you love. 6 Season with a little sea salt and pepper. 7 Fold it over like a quesadilla and toast both sides until golden brown and slightly crispy.View original recipe
