Chicken and Kabocha Squash Curry (Dairy-Free)

What you need

onion

cup kabocha squash

bell pepper

oz no salt added diced tomatoes
oz full-fat coconut milk

clove

tbsp curry powder

tsp salt

tsp black pepper
Instructions
0 Add oil into instantpot over the saute setting and add chicken and onions to cook, for about 3 minutes. 1 Add in kabocha squash, sliced red bell peppers, diced tomatoes, coconut cream, garlic, curry powder, sea salt and black pepper. Stir together. 2 Secure lid and turn to “SEAL”. Cook for 10 minutes on high pressure. Quick release pressure by changing to “venting”. Serve over rice!View original recipe
