Carrot Cake Walnut Raisin Muffins with Greek Yogurt Frosting

What you need

cup coconut sugar

tsp cinnamon

tsp baking soda

tsp salt

egg nog

tbsp almond milk

cup ghee butter

tbsp almond butter

tsp vanilla extract

cup carrot

cup black walnuts

cup raisin

cup vanilla yogurt

cup powdered sugar
Instructions
1 Preheat oven to 375 F. 2 In a large bowl, mix together flour, sugar, cinnamon, baking soda and salt. 3 In a medium bowl, whisk together 2 eggs. Add in almond milk, olive oil, almond butter and vanilla extract. 4 Add dry ingredients into wet ingredients. Stir in carrots, chopped walnuts and raisins. 5 Bake for 20-22 minutes or until a toothpick inserted in center comes out clean. 6 When done, allow to cool for 5 minutes. Then add greek yogurt frosting on top with extra crushed walnuts and raisins!View original recipe
