What you need

cup unsweetened shredded coconut

cup sunflower seed butter

pinch cinnamon

cup rolled oats

tsp vanilla extract

tbsp ground flaxseed

pinch mini chocolate chips

tbsp chia seed
Instructions
1 Soften the Dates: Soak Medjool dates in warm water for 10 minutes if they’re firm. Drain well. 2 Blend: Add oats to a food processor and pulse to break them down slightly. Add dates, coconut, sunflower seed butter (or tahini), and cinnamon. Blend until a sticky dough forms. 3 Roll: Scoop out small amounts and roll into 1-inch balls using your hands. 4 Chill: Place in the fridge for at least 30 minutes to firm up.View original recipe
